Food sticks to cast iron for two main reasons: heat and oil.
Cast iron is porous. If you zoom in on its surface, you’ll see tiny bumps and ridges. When a pan is properly preheated and oiled, the oil fills these microscopic gaps. As it heats, it undergoes a chemical reaction called polymerization, bonding to the pan and creating a slick, natural non-stick surface.
If the pan is too cold, the oil doesn’t polymerize properly, and food seeps into those pores and sticks. If it’s too hot, food can burn and adhere to the surface. Get the temperature right, and you’re golden.
The 3-Step Golden Rule
Step 1: Preheat Your Pan (Empty)
Place your cast iron skillet over medium heat for 3 to 5 minutes. Because cast iron holds heat so well, you rarely need to use a heat setting above medium.

Avoid adding very cold food straight from the fridge to a hot pan. The temperature shock can cause sticking. Let meat rest at room temperature for 15–20 minutes before cooking.

Butter can burn at high heat. Start with a thin layer of oil, then add butter right before you add your food.
What About Baking?
When baking with cast iron, preheat your bakeware for items like cornbread, pizza, or drop biscuits. However, for cakes, brownies, and pies, there’s no need to preheat the pan.
